Fried Apples, Apple Fritters, Glass of Snow, Apple Butter, Fruited Gelatin Salad, Applesauce, Baked Apple, Apple Crisp, Apple Salad, Dried Apples

FRIED APPLES
4 apples, quartered (do not peel)
1/2 stick of margarine melted in medium skillet

Place apples in skillet, cover and simmer until tender (10-15 min.), stirring occasionally.
When apples are soft, sprinkle 2 tablespoons of brown sugar on them.

APPLE FRITTERS
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 egg
1/3 cup milk
1 cup finely chopped apple

Combine dry ingredients.  Add liquids and egg; beat until smooth and then blend in the apples.Drop by teaspoons into 375 degree hot oil.  Cook until lightly browned; turn and brown other side.Remove and drain on paper towels.  Roll in powdered sugar.

GLASS OF SNOW - This recipe is attributed to Corinne, Travis, and Adam Beiersdorfer.
Cider
2 bananas
1 and 1/3 cup of cold milk
1 tsp vanilla

Pour cider into ice-cube trays and freeze (a few hours ahead of time)
Peel and place bananas, milk, vanilla and six frozen cider cubes into an electric blender
Blend on low speed for ten seconds.  Be careful not to over-blend.
Pour mixture into four glasses, sip your snow under a nice shade tree.

APPLE BUTTER
4 apples peeled, cored, and chopped (2 golden and 2 red delicious)
1 cup apple cider
1 and 1/2 tsp cinnamon

Bring these three ingredients to a boil in a covered 1 quart saucepan.
Uncover, reduce heat, and let simmer, stirring frequently.  When apple chunks
are easy to mash with a spoon, test for proper thickness but placing a spoonful
on a plate.  The apple butter is done when no watery ring forms around the edge.
At this point, pour the apple butter into a blender and blend until smooth.
Keep it refrigerated, when not in use.

FRUITED GELATIN SALAD
1 box gelatin dessert (Jell-O) fruit or mixed.
2 cups fruit juice (apple cider, orange juice, or your preference), heated
1 cup fruit, cut up (you select)
1/2 cup nuts, chopped

Soften the gelatin dessert in the fruit juice.  Stir.
Chill until partly set.  Stir in remaining ingredients (fruit and nuts).
Chill until firm.

APPLESAUCE
6 medium apples, peeled, cored and sliced
1/2 cup white sugar
1/4 tsp cinnamon
1/4 cup water or cider

Microwave:  Place apple slices and water in large microwave safe bowl.  Cover with
waxed paper and cook on high for 5 minutes.  Remove and stir.  Cook additional 5 minutes
and stir again.  Break up chunks and add sugar and cinnamon.  Cook 2 more minutes.  Cool before serving.
Saucepan:  Place apple slices and water in saucepan and bring to a boil, stir, cover,
reduce heat, and simmer for 10 minutes.  Add sugar and cinnamon, crush with potato masher
if desired.  Simmer for 15-20 minutes longer.  Cool slightly before serving.

BAKED APPLE
1 apple (cored)
Raisins, nuts, red-hot cinnamon candies (optional)
2 tbsp brown sugar
1 tbsp margarine
2 tbsp water or cider

Remove 1 inch strip of peel from top of apple.  Place brown sugar and margarine in center of apple.
Top with raisins, nuts, or red-hot cinnamon candies, if desired.  Pour water or cider over apple.
Place in ovenproof or microwave safe dish.  Microwave:  Cover and cook on high for 4-6 minutes, or until done.
Conventional Oven:  Cover and bake in pre-heated 350 degree oven for 30 minutes.  Remove cover and continue
baking for 10 more minutes, or until done.

APPLE CRISP
6-8 large apples, peeled and sliced
1 cup white sugar
1 cup margarine
1 cup rolled oats
1 tsp cinnamon
1 cup all-purpose flour
1/2 tsp nutmeg
1 cup firmly packed brown sugar

Pre-heat conventional oven to 350 degrees.  Grease a 9x13 baking pan.  Place apples in pan.
Combine the remaining ingredients, blend together until crumbly.  Top apples with this mixture.
Bake for 40 minutes.  Serve warm or cold (wonderful with ice cream).

APPLE SALAD (single size)
1 apple (cored, peeled, chunked)
1 small celery (cut up, 2-4 inches depending on your taste)
Meat of 1 walnut (broken up into pieces)
5 small marshmallows
5 raisins
1 spoon or mayonnaise

Mix all ingredients together in a bowl, and VOILA!, you have an apple salad. BACK TO TOP

DRIED APPLES
Dried apples are good snacks and easy to prepare.
Core the apples and cut into medium size pieces or slices.  Peel may be left on the pieces/slices.  Spread the pieces
or slices on cookie sheets and place in your oven at a very low temperature (125 to 150 degrees F.) for 6-8 hours.
Remember, it may take up to 10 hours at times and depends in thickness of pieces/slices.  Turn them several times
during drying (check and turn every hour).  When done, pack them in airtight containers and store in a cool dry
location.  They can be frozen in small packages just for snacking and you never have to worry about freshness.
